Dodging is the opposite of burning. Dodging in photo restoration is also a term carried over from the photographer in the darkroom whereby light is held back from shadow areas so the detail remains visible and they do not become so dark nothing can be seen.
Photoshop offers many ways to dodge an image from a simple tool from the tools palate to adding a whole new layer to dodge on an overlay so the original image is untouched and any adjustments can be made without having to start over.
